Menu Plan Monday-10/1/12

Since the end of January, I've been successful at weekly menu planning. It hasn't come easily.

However, the benefits have been awesome.

  • Money saved by not dining out.
  • Lots of time in the kitchen which is nice because I like to cook.
  • Knowing what's for dinner ahead of time instead of freaking out at the last minute.
  • Eating healthier which has resulted in weight loss, better sleep and clearer skin.

I spent part of 2011 attempting a paleo/primal way of eating but not giving up soda, occasional visits to fast food restaurants and a treat of a candy bar. The results: MEH. However, this spring, I had to make some serious dietary changes for health reasons. No ifs, ands or buts. No pasta, bread, flour, coffee, cut back on dairy and limit all forms of sugar. NO CHOCOLATE. This left me asking, what do I eat now? Sugar is in everything! Thankfully, the dietary changes I needed to make (handed to me by my doc) went along with what I'd been trying to attempt for a year. I just had to bite the bullet and get down to work. And I did. I'm feeling much better. I miss pasta and coffee sometimes.
